High Protein Black Forest Ham & Cheddar Breakfast Biscuits
A freezer staple built so breakfast never depends on willpower.
Mornings are where most people lose the whole day before it starts. You wake up already behind, you haven’t decided what to eat, and the easiest thing in the kitchen is usually the thing that doesn’t move you toward the body you want. That’s not a willpower problem. That’s a systems problem.
I don’t rely on discipline at 6am. I rely on what’s already sitting in my freezer. If the easy choice and the healthy choice are the same choice, I don’t have to choose anything at all. That’s the whole idea behind these biscuits. Make them once, and breakfast stops being a decision.
These are loaded with Black Forest ham, sharp cheddar, and just enough Dijon and black pepper to make them taste like something you’d actually crave, not something you’re settling for. High protein, real ingredients, and built to grab straight from the freezer on your way out the door.

Storage
Refrigerator: Store in an airtight container for up to 3 days.
Freezer: Once completely cooled, wrap each biscuit individually or place them in a freezer-safe zip-top bag with parchment paper between layers. Freeze for up to 3 months.
Reheating
From the refrigerator: Microwave for 20 to 30 seconds, or warm in a 350°F oven or air fryer for 5 to 7 minutes.
From frozen: Thaw overnight in the refrigerator, then microwave for 20 to 30 seconds. You can also use your microwave’s defrost setting before heating until warmed through.
Meal Prep Tip
I built these with meal prep in mind. I freeze them individually so breakfast is ready whenever I need it, no thinking required. Thaw one overnight in the fridge or use the defrost setting on your microwave, then warm until heated through.
I use these for everything from a quick egg sandwich to a base for a lunchtime pizza.

High Protein Black Forest Ham & Cheddar Breakfast Biscuits
Makes 8 biscuits
Dry Ingredients
2 cups Fit Flour high-protein flour
2½ tsp baking powder
½ tsp baking soda
½ tsp kosher salt
¾ tsp freshly ground black pepper
½ tsp garlic powder
¼ tsp onion powder
¾ cup reduced-fat sharp cheddar cheese, freshly shredded
Wet Ingredients
1 cup low-fat cottage cheese, blended until smooth
1 large whole egg
½ cup liquid egg whites
½ tbsp melted butter
1 tsp Dijon mustard
Mix-ins
12 oz Wegmans Uncured Black Forest Ham, cut into small cubes
2 tbsp fresh chives, finely chopped (or dried)
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Blend the cottage cheese until completely smooth.
In a large bowl, mix together the Fit Flour, baking powder, baking soda, salt, black pepper, garlic powder, onion powder, and shredded cheddar.
In a separate bowl, whisk together the cottage cheese, whole egg, egg whites, melted butter, and Dijon mustard.
Pour the wet ingredients into the dry ingredients and stir just until combined.
Fold in the diced Black Forest ham and chives.
Let the dough rest in the refrigerator for 5 to 10 minutes.
Divide into 8 biscuits, about 3½ inches wide and ¾ to 1 inch thick. Optional: refrigerate for 10 to 15 minutes before baking.
Bake for 18 to 22 minutes, until lightly golden and the centers reach 165°F.
Cool for 5 minutes before serving.
